Back to School Banana Spinach Breakfast Muffins and some Back to School Tips

Back to school is approaching fast, my kids start back mid August. Those first few days of getting back into the routine are going to be so painful. With some prepwork, it can be less of a drag. 



The biggest piece of advice that I’ve learned through the years is to start now,  Hang a calendar with the day school starts circled.  Now start easing back into the school routine, bedtimes, wake-times, eating a great breakfast, etc.  Sleeping patterns take some time to correct, sleep experts suggest starting 2 weeks before school starts. 



Have a good healthy breakfast ready to go, below is a simple yummy breakfast muffin recipe that my kids love, but there is nothing wrong with a piece of fruit and a yogurt.  You know your kids best.  Studies show that students who eat breakfast function better at school and have more energy.



Spinach is such a good food to increase before school starts. Your kids will be staring at books, boards, words, computer screens quite often. Spinach is great for eye health .  Spinach has all of the known vitamins for enhancing eye health: beta-carotene, lutein, and vitamin E.  Many kids don’t like spinach, and these muffins are perfect because the ripe banana masks the strong taste of spinach so well.  Most kids are bananas for bananas . This sweet food is one of our first foods growing up. Many people call bananas the original fast food. But bananas are so good for growing kids.  Bananas are loaded with nutrients! They include vitamin A (another eye healthy vitamin) potassium, calcium, magnesium, iron, folate, niacin, B6, manganese and many more! This recipe uses the neglected bananas left on your counter, the browner and riper the better! 







Spinach Banana Muffin Recipe



Course: Snack, Breakfast



Cuisine: American



Prep Time:  10 minutes Cook Time: 25 minutes Total Time:  35  minutes



Servings: 15 Muffins



Ingredients 2 ¼ cups Old-Fashioned Oats or Oat Flour



2 tsp Baking Powder



½ tsp Baking Soda



½ tsp Salt



1 tsp Ground Cinnamon



½ cup Coconut Sugar (or your preferred sweetener)



½ cup Almond Milk



2 cups Spinach Leaves



¼ cup Coconut Oil



2 Large Bananas (Extra-Ripe)



2 Eggs



1 tsp Vanilla



Nuts for topping (optional but pistachios go really well here)







Spinach Breakfast Muffin Instructions



Step 1: Preheat oven to 375º F /190º C and grease or line a muffin tin.



Step 2: To make out flour, put 2 cups of old-fashioned oats in your blender and blend until the oats achieve the texture of flour. Skip this step if you already have oat flour.



Step 3: In a mixing bowl, add the out flour and the rest of the dry ingredients (ground flaxseed, baking powder, baking soda, salt, cinnamon and sugar).







Step 3: Mix until well combined.







Step 4: Add almond milk to the blender followed by 2 cups of spinach. ( Oat Milk works too)







Step 5: Blend together until completely smooth.  Step 6:  Then, add bananas and coconut oil and blend until smooth. Then add vanilla and eggs and blend until well combined.







Step 7: Pour blended mixture into the bowl with dry ingredients and stir to combine.











Step 8: Fill each well in your muffin tin with ¼ cup of batter.







Step 9: Bake for 20-25 minutes, or until a toothpick comes out clean and the top springs back when touched. Final Step: Let it cool for 10 minutes before serving and enjoy! Use a ziplock or airtight storage container for the leftovers and use them for quick back-to-school breakfast mornings!











More Helpful Back to School Tips



This one is especially important for changing schools or kindergarteners. Tour the school on a quiet day.  Many schools have this planned already, but if your child’s school doesn’t, just ask. All three of my kids are starting a new school this year, we toured about a month ago and they feel more confident about the whole situation.



Find a back to school buddy.  Ask in your local neighborhood facebook group or mommy groups if any kids nearby are starting the same school. Then plan a playdate. A friendly face in the crowd could make a world of difference.



Plan out your child’s homework space before school starts. Go thrifting with your big kid and find a desk they love and paint it together. Or have a basket with homework supplies for your dining room table. I like my kids to do homework near me, so I can drop in and help when I’m needed.
